Many of us love creamy mash as a side dish and using sweet potatoes can make it even tastier. Now one chef has revealed a recipe that gives “super creamy” sweet potato mash using three ingredients and taking just five minutes to prepare.
Professional chef Kelly Scott said it was her favourite food. Not only that, but she said she was often complimented on her take on the dish.
She said: “People always ask why my sweet potato mash is always so much better than normal, and this is how.” Her recipe takes five minutes to prepare and then about 45 minutes to cook, reports the Express US.
In a video online, Kelly said: “If you’re like me and love all things potatoes, then you have to make this sweet potato puree. It’s honestly my favourite side dish. It’s super creamy, smooth, and easy to make with three ingredients.”
Sweet potato mash recipe
Ingredients
- 1.5 lb (680g) orange sweet potatoes
- 1/2 cup (60g) of melted coconut milk or cream
- Salt to taste
Kitchen equipment:
- Baking tray
- Baking parchment
- Blender
According to Kelly, the secret to making the best sweet potato mash is by slowly roasting them in the oven. She said: “The key is actually roasting your sweet potato instead of simmering them in water.
“I roast them in a cold oven because if they come up to temp with a cold oven, then they’re actually a lot sweeter. The sugars caramelise and it brings out the sweetness in the yams (sweet potatoes).“
To begin, line a tray with baking parchment and stab your sweet potatoes all over with a fork. This is done to allow steam to escape while they are cooking so they do not explore in the oven.
Bake the sweet potatoes in the oven at 220C for 45 to 60 minutes. Make sure you do not preheat your oven, as the slower the sweet potatoes the sweeter they will come out.
Once they are baked, slice the potatoes open with a knife and remove all the flesh inside. Make sure all the skin is gone and then place your sweet potatoes in a blender. While it is blending, add your coconut milk or cream and then season with salt. Blend until smooth and your delicious next-level sweet potato mash is now ready to serve.
